Natural Charcoal – Hardwood Charcoal – Lumpwood Charcoal

This charcoal is made by burning wood in the absence of oxygen, and lump charcoal is the product of that. Since lump is charcoal in its most natural form, it’s no wonder purists will almost always prefer it. Beyond that, lump charcoal has a lot of attractive qualities; it lights faster, burns hotter, and leaves very little ash compared to briquettes. Lump charcoal is also more responsive to oxygen, making it easier to control the fire’s temperature if your grill has adjustable air vents.

Cons: Burns faster, more expensive, less consistent (bags can contain unusably small pieces of charcoal)

Briquettes

Technically, charcoal briquettes aren’t actual charcoal, but a combination of charcoal and other ingredients moulded into easy-to-light lumps. Kingsford Charcoal, for example, by far the most popular brand in the US, is made up of bits of charcoal, coal, starch (as a binder), sawdust, and sodium nitrate (to make it burn better). For the same reason that SPAM is cheaper than a whole ham, briquettes are cheaper to make than all-wood charcoal.

And charcoal briquettes are nothing to sneer at–competition grillers have won national contests with them. There are, however, three things that separate them from hardwood lump charcoal. First, briquettes are more consistent in their burn, since they’re all of uniform size. Second, briquettes have no distinct flavour of their own. Third, and maybe most importantly, all the binders and additives in the briquettes make for a much ashier burn. What this means for cooking is that the briquettes tend to top out at a lower heat than hardwood lump, as the ash acts to slightly suffocate and insulate the coals. The volume of ash that briquettes produces also means that you can’t use them effectively in ceramic grills like the Big Green Egg. If you’re using a brand with a ton of extra room for ash, briquettes work just fine.

Sawdust Briquettes

Comprised of 100% pure sawdust compressed into briquettes. This form of charcoal is ideal for most industrial kitchens. A high quality sawdust briquette will have a low ash content similar to that of hardwood lump, but its high calorific value allows for intense heat. Due to the process in which it is made, sawdust briquettes have no smoke and sparks, generally the two most irritable parts for chefs, especially when grilling in small spaces. Depending on the quality of the briquettes there should be no smells. High quality manufacturers stay away from the addition of chemicals to speed up the ignition phase. Furthermore Sawdust briquettes allow for a much longer burn time, lower quality products pushing the 5 hour mark and the higher quality brands like Fire Flame BBQ charcoal, pushing the 7 hour mark. All these properties make sawdust briquettes the ideal choice for catering and restaurants, but can also be excellent for use at home for a long summers day BBQ. With sawdust briquettes as there is no smoke, we recommend adding a few smokey coals of wood chips to really get that BBQ flavour in the food, otherwise it really does rely on the flavour of the ingredients.
